Hi, it’s me again — back today with a few more recipes for your weeknight dining enjoyment.
But first for anyone who’s wondering, the Tuna & Shells experience last night was exactly like I pictured – only most of the complaints came from the Husband and not the punks. Well, the youngest had a thing or two to say (it’s rare that she doesn’t, but usually she’s filled with compliments). The Pickle said, “it’s growing on me!”, and No Thank You Boy cleaned his plate (go figure). I had a pan of this Chicken Spaghetti waiting in the wings for anyone who absolutely put his or her foot down over the tuna. Needless to say, the Chicken Spaghetti is gone and I’ll be having Tuna & Shells for lunch today. And tomorrow. And probably on into the weekend.
I don’t mind.
Let’s talk recipes now.
If you’re in the mood for a great winter soup, this Salmon Chowder is excellent. Look for sale Copper River Sockeye Salmon, russet potatoes (swap them in for the redskins in the original recipe), Westpac frozen corn, and fresh lemons.
I nearly always have a bag of 16/20 count shrimp and some type of Ore Ida potatoes in my freezer. They come in handy on a busy weeknight and make this Shrimp with Indian Spiced Potatoes a snap to pull together. Look for sale Ore Ida Diced Potatoes and Westpac Frozen Peas.
Lastly, I’m going to toss out this Cajun Chicken Wrap just in case anyone is looking for a bit of a lighter dinner option. You’ll never believe this is a Weight Watchers recipe, I pinky swear. Wait ’til Tuesday when the chicken breasts will be on sale; also look for sale Hellman’s Mayo (if you’re running low), romaine lettuce, and fresh lemons.
