Enjoy Sendik’s All Week!
So I thought I’d follow up Tuesday’s Asparagus & Wild Mushroom Risotto with a few lighter recipe recommendations for the rest of the week. First of all, although I haven’t mentioned it here, I have been on a huge salmon kick lately. I tried a new recipe the other night that I’ll share with you all at some point, but it was so delicious that it all got eaten and there wasn’t a pretty piece left for a photo op (a frequent problem at my house).
In the meantime, and if you’re short on time, you should definitely try this Roasted Salmon with Asparagus with Lemon Caper Sauce. Scroll down on the recipe page for a really simple side dish. Both sound complicated; trust me, they’re not. Look for sale Sendik’s Fresh Faroe Island Farm Raised Salmon, fresh asparagus, Davinci Olive Oil if you’re running low, Pacific Organic Chicken Broth, and Parmigiano Reggiano.

If you’re in the mood for something that tastes naughty, but is in fact very nice, try this kid friendly and (dieting) mother approved Lightened Up Macaroni & Cheese. Serve it on its own with steamed veggies, or as a side to a protein for something more substantial. My kids had absolutely no idea this was a light. I love when that happens! Sale ingredients include Davinci Pastas, Wisconsin 5-Year Cheddar, and Parmigiano Reggiano.
Finally, you know how I love to keep soup in the fridge for weekend lunches – I’ll be making a batch of this Roasted Tomato Soup with Parmesan Wafers on Friday morning. It’s soooooo flippin’ good with a gooey grilled cheese sandwich. Look for sale stem tomatoes, Pacific Organic Chicken Broth, and Parmigiano Reggiano.
