Enjoy Sendik’s All Week!
You’ve probably noticed by now that Sendik’s Natural Pork Tenderloin Value Packs are on sale this week, and they’re priced at a very thrifty $4.99 a pound. What a bargain. What a great time to haul back out three kid-tested, Mom Damron-approved recipes, each one very different from the other, and each calling for this super inexpensive and versatile cut of pork. What’s not to like about that?
If you’re in the mood for an Asian-inspired menu, try this recipe for Pork Tonkatsu. I haven’t made it in a really long time but last time I did, I swore it tasted like (and I mean this in a really nice way) Shake & Bake. Remember that stuff? I haven’t had Shake & Bake anything since approximately 1976, but I remember really, really liking it when I was eight. This recipe is better. Try it.

Switching gears completely, these Shredded Pork Wraps with Lemon Coleslaw are a great weeknight dinner if people at your house are running in five thousand different directions and no one is available to eat at the same time. Make both the shredded pork and the coleslaw early in the day, and busy people can assemble their own wraps at their convenience. At my house, I’m all about making everyone else’s life more convenient, especially the teenagers I live with. Maybe you feel the same way about your own household. ; )
Finally, if you’re entertaining guests this weekend, try this Adobo Rubbed Pork Tenderloin with Black Bean Pico de Gallo — it is awesome! It comes together quickly, so it would also be great for a weeknight. Save even more time by picking up a container of Sendik’s Pico de Gallo and mixing it with the avocado and can of black beans that are called for in the recipe. This is a fabulous summer dish that won’t blow your calories for the day (if you paying attention to that sort of thing). I’m also a big fan of the sear-roasting technique that’s used for cooking the pork. It’s no fail.
