Here are three great, kid-tested, mother-approved recipes to help get you through the first week of school and the first real deal, real live, real season Packer game on Sunday. I have both a carnivorous option and a veggie suggestion — either awesome sandwich is the perfect answer to any school night or football watching menu question. The third recipe is one that I absolutely cannot believe I haven’t shared here before – one of my all-time favorite bars, and you may have heard of it: the Scotcheroo, a DamFam lunchbox staple. Make them for football watching, and if you can resist eating them all in one sitting, save out a few for your brown baggers.
Use the sale Sendik’s Natural Top Sirloin Steaks to make these fabulous Steak Baguettes with Pesto Mayo. Great for a weeknight, easily doubled or tripled for entertaining, and leftovers are perfect for the lunchbox. Pick up one or two (or more if you’re serving a crowd) of the sale Ecce Panis Baguettes.
These Caesar Salad Bagels are also great for a light lunch or dinner. Look for sale romaine lettuce, and either Sendik’s Bagels (in the bakery) or 1st National Bagels (in the Dairy section). Kraft Dressings are also in the current ad. Sendik’s Roasted Chicken Breast is also on sale and topping this sandwich with a few slices would be a great way to add in some protein.
Finally, here’s the Scotcheroo recipe!! One note: I don’t like skinny little Scotcheroo’s – I make mine they way you’d find them in a bakery: nice and thick. That’s why I always double these ingredients for a 9×13 pan, or else make the recipe as is and use an 8×8 pan instead. I’m known to overindulge from time to time, so those are just my two cents. Enjoy!!
Serves: 2 (kidding, makes 1 9×13″ pan)
6 c. Special K (Special K is on sale)
1 c. white sugar
1 c. light corn syrup
1 c. peanut butter (Krema Peanut Butter is on sale)
1 c. semisweet chocolate chips
1 c. bittersweet chocolate chips
Coat a 9″x13″ glass pan with cooking spray and set aside. Place the cereal in a large mixing bowl and set aside.
Place the sugar and corn syrup in a medium saucepan and bring to a rolling boil over medium high heat, stirring constantly. Remove pan from heat and stir in the peanut butter. Continue to stir until the peanut butter is completely melted and the mixture is smooth. Pour the peanut butter mixture over the cereal and use a large spoon to mix cereal and peanut butter together until well combined. Working quickly, empty the cereal mixture into the glass pan and press it down evenly.
Place the semisweet chips and the butterscotch chips in a microwave safe bowl. Microwave on high for 30 seconds. Remove bowl from microwave, and stir chips. Continue to microwave in 10 – 15 second increments or until chips are completely melted, stopping to stir each time. Spread melted chocolate mixture all over the top of the cereal mixture. Chill until set, then use a sharp knife to carefully (!!) cut the bars into whatever sizes you choose.
