Chipotle Shrimp Tostadas With Simple Pico De Gallo
There’s a darling Mexican cantina on Pewaukee Lake called Seester’s. It’s a cute little spot with sidewalk dining, just across the street from the public beach. The nice people at Seester’s keep big bowls of fresh water on the sidewalk for all the thirsty dogs that pass by – their owners clutch dripping ice cream cones in one hand and leashes in the other. BLT, for Two!
Two of my punks are already back in school, leaving the Pickle at home with me to enjoy one last week of summer. We knew we needed some sustenance before we struck out on a quest for the perfect pair of jeggings (a middle-schooler’s must have, I’ve been told), so we rummaged through the fridge, and this is what we concocted: a BLT for Two salad! Hot diggety dog, is it good! Beware the bacon croutons, however – they’re addictive — we almost ate the whole batch before the salad was ready to serve. Read the rest of this entry »

Chilled Avocado Soup with Fresh Ginger & Lime Crema
When I was in college I had a reputation (not THAT kind of reputation, silly). I was known for my lipstick habit. Because very, very rarely was I ever spotted around campus without a bright-pink pucker.
Well, one time on spring break in Daytona Beach, I forgot to put it on. But I had mono and I was staying in a roach motel and I missed my mom and I was really, really unwell. I know. That’s no excuse.
But nevermind that. I LOVED the day-glo pinks and fuschias of the 80’s. So much so that a roommate of mine once said, “Ah’ sway-uh, Leah, do yew keep yo-wah lipstick on yo-wah naht-stay-und?”
I went to college in South Carolina. Did you catch the accent? Read the rest of this entry »

Roasted Tomato Soup with Parmesan Wafers
I realize it’s the middle of August and we shouldn’t dare think about a steamy bowl of tomato soup for another three months, but I just had to seize the opportunity. Stem tomatoes are on sale this week for .99 a pound. 99 Cents!! A pound! I’m sorry, but this calls for a batch of soup. If you just can’t stomach the thought of soup in August, then make it now and freeze it for later. Read the rest of this entry »

Roasted Shrimp & Orzo Salad
I co-hosted a dinner with a girlfriend this past weekend and each guest brought a dish to pass. Some brought appetizers, a few made gorgeous salads - others brought breads, rolls, and plates of bars. It was such a fun way to get together with friends, while sharing the burden of menu planning and food prep. If you’re in the mood to have some friends over but are leary of all the work, I highly recommend this method of hostessing! Most guests are more than happy to contribute to the soiree in one way or another. Read the rest of this entry »

Lamb Gyros with Yogurt Dill Sauce
Because it’s Sunday…and it’s pouring…and my grill is out of propane….again.
Because I’ve been gushing non-stop for three weeks about these incredibly good, genuinely-authentic-tasting-make-‘em-at-home-yourself lamb gyros.
Because I swore I’d post this recipe the next time Strauss Lamb went on special, and the time is NOW!

Breakfast Bruschetta
The muggy, buggy days of summer are here this week, and I’m doing my best to enjoy them while they last. Not the buggy part so much. They’re pretty awful and bug spray is disgusting stuff. The mugginess however, adds tons of delightfully (cough) unruly curls to my hair, an effect that can really only be achieved in the stickiest of summer months, or the steam shower at the gym. Turkey Club Salad
We had quite an unusual situation on the homefront last night. With No Thank You Boy up north enjoying the great outdoors through Monday, my youngest still away at camp, and The Husband on a business trip to Chicago – The Pickle and little ol’ me were left to hold down the fort and fend for ourselves for 24 hours.
You might envision the two of us huddled together, shivering and sobbing with fright and loneliness, pining away for our absent family members, and counting the moments until they all returned.
And that would be……incorrect. Read the rest of this entry »

Strawberry Gelato
It will give me such great comfort if the following scenario has played out at your house at some point this summer:
“MOM, I can’t find my (lost item)!! I think (name of younger sibling) took it again! (He/She) is always taking my stuff!” You then assist in an exhaustive search, and discover that the ‘missing’ item has been in the accuser’s own bedroom all along, and had he/she picked up his/her clothing and bath towel that morning (as you had requested), the lost item never would have gone missing in the first place.
