Caesar Salad Bagels

Caesar Salad Sandwich

The heatwave continues, and so does my lack of interest in standing anywhere near my stove.  The only thing I AM really interested in today is to go to the pool and stand in the water up to my neck.  Hopefully, a cute cabana boy will be waiting poolside to deliver me iced tea with a lemon and a Splenda and a bendy straw.  Ideally, he’ll offer to apply sunscreen to my shoulders and back - I’ll decline. I’m married and all.  Finally, he’ll be waiting with a fresh towel when I decide to hit the ol’ chaise lounge to read my trashy romance novel or maybe take a snooze in the shade. Herbed Chicken Salad Sandwiches

Cooking Light has a great piece on summer sandwiches in the August issue.  I want to try all of them.  In fact … you know that movie, Julie & Julia?  Where the food blogger makes and blogs about each of the 524 recipes in Julia Child’s Mastering the Art of French Cooking?  Well, I’m gonna make all those sandwich recipes.  That’s right, all five of them!  Here’s the first. Eggplant Stacks with Tomatoes & Parmesan

Eggplant Parmesan

I have this friend and she’s a super adventurous cook.  She uses recipes as jumping off points – sometimes she doesn’t even use a recipe – and everything she makes is fabulous.  Her signature-no-recipe-salad-dressing, for example,  is TO DIE FOR.  Every time I try to nail her down on the ingredients she’s like, “oh, I don’t know, I never do the same thing twice, it’s a little of this, a little of that” real casual-like and la-di-da and it drives me CRAZY because I am sooooo not that kind of cook. Spicy Shrimp and Grits

Yes, grits!  Don’t run away!  If you’ve never had them before, I think you’re going to like them.  I LOVE THEM.  If midwestern comfort food is mashed potatoes, then southern comfort food has got to be grits. Read the rest of this entry »

Black and Blueberry Crisp with Peaches

Blueberry Crisp

No, you’re not having deja vu …. if this dish looks familiar to you it’s because I first posted it here last July and I still remember the day quite clearly:  I ate the photo shoot for breakfast and made no apologies.

Even though I love trying new recipes, I’m bringing this crisp back out today.  It’s the perfect time to make it - blueberries and peaches are on sale, it tastes like summer, and it’s easy like Sunday morning!  I can’t think of a more perfect dessert for weekend entertaining.

Happy long weekend, everyone!  See you next week.  :-) Read the rest of this entry »

Macaroni Salad

Bring on the great American holiday weekend!  I want fireworks – loud ones!  And parades — long ones!  And flags flying and sun shining  and the delicious smell fabulous food cooking on a charcoal fire.  The weather’s finally going to be gorgeous, the food’s gonna be tasty and there’s BIG fun ahead, so I WANT IT ALL and I WANT IT NOW!!  Read the rest of this entry »

Strawberry Shortcake Sliders

Shortcake

Did anyone catch June’s issue of BonAppetit — the one that featured a cover photo of the stunning Gwyneth Paltrow, aka Mrs. Chris Martin?  Did it strike anyone odd that the uber-buff GP would be square on the cover of a foodie magazine?  ’Cause I thought it was weird, m’self.  I figured the new editor at BA must have some pretty low standards, kissing up to a superstar by giving her the cover shot.  And then I started reading.  And it turns out the model/singer/actress is also a pretty amazing homecook.  Huh. Spice Rubbed Pork Chops

Pork Chops

These pork chops are a riff on my favorite barbecued chicken recipe, which I’ve already made at least four times since grill season began.  I’ve been turning to it so often recently that I now keep a small container of the homemade spice rub on hand at all times, as well as a vat of the sauce in the fridge.  Last night we had it on some gorgeous salmon fillets; today I decided to give it a whirl on the boneless pork chops that are on sale.

Worked like a charm, as I expected it would.  We’re all out of propane again (dang!), so I had to broil them inside, but they still turned out tender, juicy, and delicious. Read the rest of this entry »

Ice Cream Sandwich Cake

We have here a dessert that’s simple and down home and it might just be the easiest no-bake cake I’ve ever made. It could easily win the title of “World’s Least Pretentious Dessert”. Read the rest of this entry »

Once upon a time, and long long ago, the Husband and I hosted a lobster boil in our backyard.  The economy was booming and the DamFam was livin’ large (okay, we’ve never actually ‘lived large’).  It was fun (the lobster boil).  Messy, but fun.  And super hot too, as I recall.  I think it was over 4th of July weekend.  I can’t remember.  Like I said, it was a while back.
