Have you just about had it with all of the end of the school year stuff?  Three weeks and counting and I’m about over it.  When the punks were younger and in the lower grades, I always got a little bit weepy on the last day of school — another year over, another one down, everyone’s getting older, yadda yadda yadda.  Not anymore.  The older they get, the more intense their workloads.  The projects.  The tests.  The papers and quizzes and sports and performances — good gravy please just … LET. IT. END!

Jerk Chicken & Stuffed Mini Bell Peppers with Grilled Garlic Bread

Can I just keep it real for a moment and tell you that when it came to making this chicken recipe, I was the big jerk last night.  First of all, grilling is not my forte.  I can handle your basic burger, flank steak, and even fish … but when it comes to chicken, I’m usually an epic failure, as was the case last night.  Second of all, though I fully recognize that I’m a terrible chicken griller, that didn’t stop me from chatting on the phone, updating my Facebook status and correcting math homework when all the while, dinner was morphing into a carncinogenic nightmare out on the patio. Grilled Sirloin Steaks with Blue Cheese Walnut Butter

I’m laughing to myself as I write this because when I told my friend Fernanda (of chicken chilaquile fame) that I wanted to write a piece featuring recipes for Cinco de Mayo, she smirked and teased me a bit.  There might have even been an eye roll.  “Pffft …. Cinco de Mayo is an American holiday, Leah.  It’s not even really celebrated in Mexico, because it isn’t our real Independence Day. It was only a teeny tiny battle against the French!”  Well … okay, I was schooled in a little bit of Mexican history the day we made the chilaquiles.  But this Saturday, plenty of Americans will be thinking all foods Mexican, and I’m here to help.

Chicken Parmesan Burgers

I’ll just say this from the get go:  today’s recipe is definitely for the kids.  It got four out of five thumbs up from the DamFam last evening.  Would you believe the one dissenter was the Husband?  Yeah … and he normally likes everything.  I gave my approval because all three punks (including No Thank You Boy) liked it and said they’d eat it again.  So, it was deemed blog-worthy.  However, would I call it company-worthy?  If your guests are all under the age of …. oh, I dunno? 16 or so … then yes, for sure – I absolutely would.

And, actually, I liked these burgers quite a lot.  Between last night and this morning, I tweaked the recipe a little bit and now I like it even more.  I’ll give it to you as written in Cooking Light and also list my notes on how I fudged the original for today. Read the rest of this entry »
