Last Thursday, I — along with the rest of the jiggly New Year’s resolutioners — found myself in the super-unfortunate and un-fun spot of waiting for cardio equipment at the gym.  Those of us who took four (*ahem*) six weeks off from our workouts during the holiday season had at last come to our senses and turned up for our turn on the treadmill.  If we thought we were going to be greeted with open arms by those hard bodied witches, I mean, dedicated souls, who had been attending their spin and cardio and yoga sessions all along and without fail throughout the month of December, we were sadly mistaken. A wise person once said that it’s bad luck to begin any post-holiday clean eating plan before New Year’s Eve.  Since I’m never one for self-sabotage, here’s one last hurrah before we start counting calories on January 1st.  Or on the 2nd, if you’re into procrastination.

I was talking to some friends this past weekend about the order of events in their home on Christmas morning.  I’m not going to name them here (they know I love them), but here’s what they do:  first, they open their stockings. But before they open any presents, they proceed in an orderly fashion to a formal, hot breakfast of bacon and eggs, the whole nine yards.  After dining, they take turns opening one present at a time.  Gift opening comes to a complete halt when someone unwraps an item of clothing and (wait for it) the recipient must try on and model said apparel for the rest of the family, receive compliments and admiration, and offer up effusive thanks.  Then the civil, one-at-a-time gift opening can resume.  Well, I was kind of snickering (they weren’t) because – first of all, this must take hours.  And, not to make it sound like I can’t manage to maintain some small modicum of decorum in my house, their order of events is in sharp contrast to what happens at our home on Christmas morning. So, usually when it comes to Chex Mix, I go with the traditional recipe from the back of the box – the old stand by.  And I do still love it.  But since I think like a food blogger and not a normal person, I decided to see what else was out there in the way of riffs on Chex Mix.  I must be feeling rebellious today.  This version is spiced up with cayenne pepper and curry powder and it’s definitely an edgier, more daring flavor combo, but what can I say … I’m an edgy kinda gal. Oh my heavenly stars…can you even believe I made these with my own two hands (and my KitchenAid mixer)?  I don’t mean to blow my own horn but aren’t they puuurty?  Why, they might just be the purtiest dang thing I ever did create.  And you, my friends can make them too.  Don’t say you can’t – yes, you can.  Because one: they’re totally easy, and two:  can’t is not your middle name.

I was looking for a showstopping cookie for an exchange I’m going to next week – ’cause go big or go home is what I always say  – but I thought for sure any attempt at meringues would be fighting outside my culinary weight class.  I’ve never made them before and I was pretty sure they were complicated and putzy to make.  Happily, I was wrong.  These cute little cookies are high brow, low cost, and fat freaking free, all at the same time.  Gluten free, too — whoopee!! I’m pretty sure the recipe gods were against me today.  Here’s what happened:  I made a new dish this morning called Bowties & Boursin.  It totally stunk.  Or as my daughter would say, it was an epic fail.  An F- on the recipe grading scale.  It’s still sitting on my cooktop in a big sticky mess because I don’t really have the heart to throw it out just yet.  I might try to doctor it, but it’s definitely not ‘blogworthy’ as written.  I don’t even understand how it came to be a recipe that anyone would even publish for someone like me to go out and attempt to make.  Good thing I know about this recipe though.  This one is awesome.  You should absolutely try it. A casserole — I know.  Casseroles get a bad rap.  Most of the casseroles I’ve encountered deserve it though.  Canned soups, canned vegetables, processed cheeses — no wonder I look back on the 70′s and shudder — it wasn’t only because my mom dressed me in plaid pants and subjected me bowl haircuts on the kitchen table (I’m not bitter).  Casseroles….they can damage you for a long time.
