Ham and Egg Crepe Squares for Mother’s Day
Here’s a fancy little number to serve to your mama on Sunday while she lounges the morning away amongst fluffy pillows. She’s bound to be impressed with your mad cooking and presentation skills, don’t you agree? You don’t have to tell her how simple this elegant breakfast was to make — she has eyes in the back of her head, after all. She’s going to love that you whipped these up for her. Score extra points by serving hot coffee and fresh flowers on the side.

Easy Ham and Potato Soup
By request from a good friend: a super easy weeknight recipe. I mean like, crazy simple. And fast, filling, and cheap. And best of all, kid friendly. I’m serving it tonight with a tossed salad and either these popovers or these cheddar scallion scones … I haven’t decided yet.
I’ve never made a soup using this thickening technique before, but it worked like a charm. For a different, non chunky version of potato soup, you could try this one too, which uses bacon instead of ham. I like them both. Sale ingredients (there are a lot of them!) are in green. Have a great week!

Croque Monsieur
I’m working through shaking off the Packers’ loss, and I hope you are too. Although I am still quite sad and disappointed over how the season ended, I’ve managed to drag myself out of bed after I realized that sobbing in a fetal position is no way to go through life. Not to dwell, but weren’t you so looking forward to a few weekends of playoffs, and then a Packers Super Bowl repeat? Football has a twisted way of giving purpose to dismal late January weekends — but the football gods just weren’t with us on Sunday.

Creamy Fettuccine with Ham & Vegetables
My youngest never met a rich food she didn’t like, so it’s no surprise she has a major thing for fettuccine alfredo. She orders it whenever she’s given the chance, and she begs me to make it at home – but last time I checked, real alfredo has like, 12 tablespoons of butter and two cups of whipping cream. No thanks. As you’ve probably noticed by now, we’re the health conscious sort around here (cough), so we don’t do heavy whipping cream too often.
