Yes, grits! Don’t run away! If you’ve never had them before, I think you’re going to like them. I LOVE THEM. If midwestern comfort food is mashed potatoes, then southern comfort food has got to be grits.
Bring on the great American holiday weekend! I want fireworks — loud ones! And parades — long ones! And flags flying and sun shining and the delicious smell fabulous food cooking on a charcoal fire. The weather’s finally going to be gorgeous, the food’s gonna be tasty and there’s BIG fun ahead, so I WANT IT ALL and I WANT IT NOW!!
Well, it’s happened again – I’ve eaten something wonderful at a restaurant and cannot get the meal out of my head. And how twisted is this: I had this particular dish at Bosley on Brady Street, way back in March. So yah, I’ve pretty much had Grilled Romaine Lettuce on the brain for almost three months (go ahead, say it: I need a life). Bosley’s Romaine on the Grill with Creamy Blue Cheese Dressing made me practically swoon from sheer bliss. I knew I had to recreate it.
The first shout out goes to all my ‘Loser friends at the Mequon Sendik’s … BIGGEST LOSER, of course! The participants at the Mequon store won the Sendik’s Biggest Loser challenge. Woot, woot! This recipe is for all of you Losers everywhere – keep it up! Mequon girls (ahem, you know who you are), don’t go celebrating over slices of cheesecake — make some of these muffins instead — you won’t believe they’re light. They’re rich and chocolatey and I have my kids fooled into thinking they’re cupcakes.
Another school year is winding down and what a bittersweet feeling that is. We’re all thrilled that summer is on the horizon, but in the here and now, there are big projects due and exams to study for and class trips to take, and that means we’ve reached DEFCON 4 on the organization level at our house. We need to keep our eyes on the prize. We must stay focused! To that end, quick and easy dinners are the name of the game.
My youngest had a terrible day yesterday. Actually, her day was humming along just fine until around 3:30, when we pulled into the neighborhood after school and drove past her best friend’s house. And she spotted the newly planted First Weber sign square in the front yard. And it didn’t click immediately in her 10-year old brain what that sign meant, exactly. As I watched her in the rearview mirror, my heart sank right along with her jaw. The realization hit her. And the panic set in.
I made this over the weekend. It was awesome. You should make one too. ‘Cause even when you’re eating light, sometimes a girl’s gotta have cake for breakfast.
April and May are Wellness Months at Balistreri’s Sendiks, and I’ve been asked to participate by featuring healthful recipes throughout the duration. I’m tickled to play along! Who doesn’t want to eat healthfully? Tofu, granola, and veggie burgers all around! Walking lunges on your way to the fridge please… power squats while you unload the dryer and pick up after your punks, and don’t forget to contract your biceps as you lift that sparkling water to your lips!
