Grilled Romaine & Shrimp (or Chicken) with Light Caesar Dressing
Well, it’s happened again – I’ve eaten something wonderful at a restaurant and cannot get the meal out of my head. And how twisted is this: I had this particular dish at Bosley on Brady Street, way back in March. So yah, I’ve pretty much had Grilled Romaine Lettuce on the brain for almost three months (go ahead, say it: I need a life). Bosley’s Romaine on the Grill with Creamy Blue Cheese Dressing made me practically swoon from sheer bliss. I knew I had to recreate it.

Chicken and Spinach Salad with Bacon Dressing
This right here’s the best spinach salad I’ve ever eaten in my entire life. I just demolished this photo shoot and wish I had some more! Keep in mind this rave review is coming from a gal who doesn’t even LIKE raw spinach all that much – I’m not crazy about how it feels on my teeth, if you want the truth – but this salad’s so flippin’ good, my pearly whites didn’t even get weirded out!

Roasted Shrimp & Orzo Salad
I co-hosted a dinner with a girlfriend this past weekend and each guest brought a dish to pass. Some brought appetizers, a few made gorgeous salads – others brought breads, rolls, and plates of bars. It was such a fun way to get together with friends, while sharing the burden of menu planning and food prep. If you’re in the mood to have some friends over but are leary of all the work, I highly recommend this method of hostessing! Most guests are more than happy to contribute to the soiree in one way or another.

Turkey Club Salad
We had quite an unusual situation on the homefront last night. With No Thank You Boy up north enjoying the great outdoors through Monday, my youngest still away at camp, and The Husband on a business trip to Chicago – The Pickle and little ol’ me were left to hold down the fort and fend for ourselves for 24 hours.
You might envision the two of us huddled together, shivering and sobbing with fright and loneliness, pining away for our absent family members, and counting the moments until they all returned.
And that would be……incorrect.

Shrimp and Noodle Salad with Ginger Dressing
I’d be in such heaven right now if I hadn’t sworn myself off carbs until around the 10th of never. I’m a sucker for any Asian inspired salad, and this one has all of the ingredients that tickle me pink – shrimp, pasta, cilantro, and a salty teriyaki dressing. But after the Molten Brownie Pudding incident from a few days back – well, no carbs for me.
