Mushroom Flatbread Pizza with Gruyere and Basil
Flatbread pizza recipes have consumed me lately and as a consequence, I’ve consumed a lot of flatbread pizzas. I recently discovered lavash (I mean, I didn’t personally discover it. I found out about it is what I should’ve said) and I’ve been using it like crazy when it comes to entertaining and/or feeding friends. I’ve made about five different versions of these nifty little pizzas in the past few weeks and they’ve all gone over so well, I thought I’d share one of my favorites with you today.

Easy Ham and Potato Soup
By request from a good friend: a super easy weeknight recipe. I mean like, crazy simple. And fast, filling, and cheap. And best of all, kid friendly. I’m serving it tonight with a tossed salad and either these popovers or these cheddar scallion scones … I haven’t decided yet.
I’ve never made a soup using this thickening technique before, but it worked like a charm. For a different, non chunky version of potato soup, you could try this one too, which uses bacon instead of ham. I like them both. Sale ingredients (there are a lot of them!) are in green. Have a great week!

Quick Chicken Pomodoro
I had the best time at the Mequon store this morning! The girls in the floral department were working like mad to unpack and display all manner of Christmas decorations. At first glance I groaned to myself — Christmas already?! — but the closer I got, the more exciting it all became

Turkey Bolognese over Pasta or Gnocchi
e labor intensive chore honor of hosting the varsity boys and girls cross country team dinner here this past Friday night. No Thank You Boy asked me if I would please forfeit my turn at hosting; I declined. I’m not sure what he thought I was going to do (burp out loud) or wear (mom jeans) or serve (beanie weenies) that would embarrass him in front of his team mates. Suffice it to say, it all went well and I don’t even think he ended up all that horrified by my outfit, food, or behavior. Good thing my dorky mom jeans were in the wash I guess, LOL.

Chili-Corn Chip “Pie”
As I mentioned yesterday, I’m cooking my way through the October issue of Cooking Light – and last night we had this chili-corn chip “pie” thingy. I’m not sure why they called it a ‘pie’, it’s nothing like a pie at all…kinda weird. What it’s supposed to be is a healthier version of a “walking taco” – which is (for those who are a long time removed from the grade school hot lunch program), a meaty chili mixture spooned inside a mini bag of Fritos, then topped with cheese and sour cream and smushed around and eaten out of the bag with a plastic sp’ork.

Spicy Shrimp and Grits
Yes, grits! Don’t run away! If you’ve never had them before, I think you’re going to like them. I LOVE THEM. If midwestern comfort food is mashed potatoes, then southern comfort food has got to be grits.

Italian Chopped Salad
I feel almost embarrassed to tell you about this salad today, because it’s so versatile that it’s practically not even a recipe. But because I think like a food blogger and not a normal person, I feel compelled to chat about it anyhow. Five (count ‘em, five!) of the main ingredients are on sale, so it would practically be like withholding information for me not to speak about it.

Ravioli with Artichoke Sauce
So today we have a fresh flavored, meatless pasta dish to honor the end of winter and the arrival of a brand new season. We served it with a big chopped salad and wheat dinner rolls and were all sufficiently filled. If you need a protein, this would be yummy topped with a grilled chicken breast, or even a few grilled shrimp.

Weeknight Fish & Chips
I first posted this recipe in October of last year – so yes, it’s a re-run. But with the Pre-Lenten Seafood Sale happening this week, I thought it was worth featuring it again. It’s simple enough for a weeknight, and is the perfect make-at-home recipe if you’ve got a hankerin’ for fish-fry but don’t feel like standing in line with your patience-challenged children at a crowded restaurant on a Friday night.
