Mini Smoked Salmon Pizzas

I’ll be honest – I think calling these little appetizers “pizzas” is weird. But I wasn’t feeling clever enough to rename them, so we’re going with them named as is. Whatever you decide to label them, give them a shot. I served them to a small crowd of recipe testing guinea pigs (aka, hungry friends) on Saturday night and they all pronounced them ‘blogworthy’, so that’s all that really matters. (You might think that hungry people would put their stamp on just about any old dish, but that would be wrong. They took their taste testing seriously, were brutally honest and even sent one “un-blogworthy” appetizer back to the drawing board for re-working.)

Open-Faced Salmon BLT with Basil Mayonnaise

The Pickle and I were driving over to the high school this morning for her 8:00 cross country practice, and we had Kramp & Adler on the radio. They were discussing all the different ways for Milwaukee locals to stay cool in the heat this week and they were taking calls from anyone with constructive suggestions. So this guy out in Oconomowoc called in and offered some really helpful advice: he said everyone should stop in to Lorleberg Hardware on highway 16 and pick up an anti-chafing product they have there that can help you avoid …. uhm, uncomfortable situations in the heat. Because this is a food blog I’m not even going to tell you what the product was called, but given my immaturity and all I thought it was quite funny. The Pickle however is 14 and she embarrasses quite easily and thought that anyone talking about this sort of thing on the radio must be flat out of their minds and she asked me to please change the station, stat.

Panko Crusted Salmon

This is one of the best recipes in my repertoire for salmon of any kind – Copper River, Coho, farm raised, whatever. It’s simple and delicious, and if you’ve been here a while you know that sear roasting fish is my favorite cooking technique because it’s truly no fail. This entire dish comes together in less than half an hour, so fire up your oven, put your favorite rice pilaf on to boil, and steam some fresh veggies in the five minutes the fish takes to roast. Delicious, easy, and homemade … I hope you’ll try it. : )

Enjoy Sendik’s All Week!

So I thought I’d follow up Tuesday’s Asparagus & Wild Mushroom Risotto with a few lighter recipe recommendations for the rest of the week. First of all, although I haven’t mentioned it here, I have been on a huge salmon kick lately. I tried a new recipe the other night that I’ll share with you all at some point, but it was so delicious that it all got eaten and there wasn’t a pretty piece left for a photo op (a frequent problem at my house).

Indian Spiced Salmon with Couscous Salad

My lunch of Indian Spiced Salmon was so flippin’ delicious that five days later I can’t stop thinking about it. So as soon as I got home (well, after I hugged the twerps of course), I set out to find a recipe so I could re-create my seaside lunch.
Here’s what I found. It’s pretty darned close in taste, I have to say – although my view today is nothing remotely close to the one I had this past Sunday afternoon. As I enjoy my spiced salmon, I think back on my few days in Laguna – surfers catching waves and children playing in the sand, and I’m just wondering: if that’s the life the locals experience on a day-to-day basis, where the heck do they go on vacation?! Wisconsin?

Cedar Planked Salmon with Apricot & Jalapeno Glaze

I had an adventure yesterday afternoon. I’ll admit that I was a little jittery and nervous to start with, but it turned out to be a fun little thrill and I can’t wait to try it again sometime soon! It’s exciting to dabble in risky behavior, right? Face your fears head on? Step out of your comfort zone and learn something new?

Blackened Salmon Salad

I’m taking a walk on the wild side today by changing up one of my favorite meals of all time: the blackened steak salad. Of course I love Sendik’s more’n my luggage, but I just could not stomach $17.99 per pound for fillet today. I know it’s knock-your-flip-flops-off fantastic, but I’m in the process of signing the punks up for every summer activity under the sun this week (read: writing checks left and right), and the funds are not allowing for fillet.

Fresh Fish Friday

I will go on record here and say that I LOVE THIS CHOWDER. I just got done eating this photo shoot, and it was mmm, mmmm, good.

Wait, I believe that’s someone else’s slogan.

But I ask you: what better way is there to finish off a long, frigid week than with a big bowl of Salmon Chowder? It’ll warm your belly, bring a smile to your face, and defrost your outer abominable snowman.

Honey & Soy Glazed Salmon

Okay, in case you were worrying, I’m back in check with my healthy eating. I know you were all just waiting around, fretting over whether or not I was still lagging behind the healthy eating wagon, but – good news! I’m back, baby. Fired up, too. However, I could fall off said wagon at any second though, because as I write this it’s nearing happy hour … and I do love ‘me a nice glass of wine when the punks are done with their homework. I swear, fourth grade math flat stresses me out.

Simple Supper

Good Monday afternoon! What a terrific weekend it was — great weather, good food, and fun times spent with some of my favorite people. The only bummer is that the Packers lost, but what an exciting game! I had it on in the kitchen while I was prepping this delicious Sunday supper.
