I cannot even tell you the number of times I fell back on this recipe during track season last spring. Have you ever been to a track meet? They’re kind of like swim meets except on dry land. There are approximately 12,000 events. And your own offspring is likely to compete in oh, let’s say … two. It’s awesome when this child becomes adept at narrowing down the window of time in which she will be competing, because then you’re able to plan your arrival to the asphalt venue accordingly. Not that it’s not 100% awesome to watch other people’s children run like they stole something. Because it is. For real.
Here’s a simple one-pot dinner – the perfect meal for a busy school night. I think it tastes far more complex than the amount of work required to pull it together, and I’m also of the opinion that (like many things), it gets better the longer it sits. My kitchen smells so good right now!

One of my pumpkins was sick on the couch all day yesterday. She was pretty pitiful, so I thought that I should hang out on the couch as well. She needed company, and I needed to catch up on my Spongebob and Hannah Montana. We both needed some downtime to perfect our Doodle Jump moves, which I consider to be an important life skill. So it was a win-win.
Even though I’ve shoveled our front walk and patio three times in the past 48 hours, I know that spring is just around the corner. It’s gotta be, right? Only four short days ago the snow was all but gone, my girlies and their friends were riding bikes in the cul-de-sac, and picnicking on heart-shaped cupcakes on beach towels in the driveway.
