Italian Sub Sandwiches

Let’s all plan to stay away from heat generating devices this week. I don’t know about you, but I am far too delicate (as I snort) to stand near an oven, or tend home fires, charcoal fires, bonfires, or any other manner of flame throughout the duration of this little hot spell we’re having here. Let’s build a nice, cool sandwich and call it a day.

Baked Zucchini Fries

I’m an absolute junkie when it comes to Pinterest. Not sure I’ve mentioned it here before, but I’m crazy about it. It’s a really, really fun way to kill time and learn to about cool stuff and there’s something for darned near everyone. Seriously … everyone. For instance, pretend for a second that you’re say … a basket weaving enthusiast. You adore all things basket woven – from hair braids to buttercream frosting, to hand knit blankets, or potholders, or throw rugs. Guess what? You can find each and every one of those basket woven things (and more, I checked) on Pinterest. It’s amazing. Truly.

Cobb Salad Pitas

Today I have a sandwich idea that’s the perfect way to get the main course salad concept past your little kids or your teenagers. Maybe you know someone like NTYB who, when he hears we’re having salad for dinner, gets very ornery because he 1). is “a growing teenage boy, mom” and 2). wants to (cough) “bulk up” for cross country season (what?). I laugh because, have you met NTYB? He weighs approximately 105 lbs. soaking wet. So when we have salad for dinner I usually try to make it into something a little more substantial, lest my teenagers waste away before my eyes. Tonight we had these yummy Cobb Salad Pitas with a big pile of crispy roasted redskin potatoes and thick wedges of watermelon. It was the perfect summer meal.

Summer Corn Chowder

I know you’re thinking I’m completely out of my tree to be sharing soup here today. I don’t blame you (what loon craves soup when it’s 86 degrees?) — but for some reason this chowder spoke to me, as recipes often do. It said “make me for dinner, you won’t be sorry”. So I did, and I’m not. And you won’t be sorry when you make it either.

The corn right now is pennies an ear but best of all, it’s sweet and delicious. I served this last night with whole wheat baguette and slices of watermelon on the side. Even for a hot soup, it was the perfect summer meal. I hope you like it too. : )

Free Form Blueberry Tart

I made that tart up there all by myself. Can you believe it? Me — the pastry challenged girl who can’t make a pie crust to save her soul — I MADE THAT TART WITH MY OWN TWO HANDS!! What the heck?! Are you as amazed as I am? It might be about the prettiest thing I’ve ever written of on this blog.

Grilled Shrimp with Jalapeno – Garlic Vinaigrette

If summer’s heat ever comes back in full force, this is what you should make to celebrate its return. I made these for dinner at the lake this past weekend when it was pouring and we were bundled up in jeans and sweatshirts and what I really felt like making was meatloaf and mashed potatoes — but I had all of these ingredients on hand and decided to forge ahead with a summer menu anyway. It’s summer, darn it! Let’s eat some summer food.

Barbecued Cheddar Burgers

No Thank You Boy returned yesterday from two weeks in China. While he was away I heard from him one (that’s ONE, as in a singular instance) time and when I did it was a one (again, ONE) sentence email in which he briefly stated that there were creepy crawlies in his hotel room but that he didn’t care because all of the Chinese girls thought he was Justin Bieber. Frankly, I don’t see the resemblance, but oh well … I had a laugh and so did he. Now he’s home and hungry for American food and (SURPRISE!) his mom’s home cooking. He said he missed milk, cheese (“I just really want some cheeeeeeeeeeeese, Mom”) and chocolate. So last night, I made these cheddar burgers in his honor.

Panzanella Salad

I had a blast channeling my inner 15-year-old girl yesterday when a friend and I took two carloads of giggly girlie girls over to Noah’s Ark in the Dells for the day. Oh. My. Gosh. If you haven’t shrieked like a teenage girl in a while, you should definitely give it a go. It’s cathartic and fun and no one even cares because they’re all screaming their faces off, too. Somehow we lucked out and there were no lines for anything at all, which meant we were able to run from slide to slide without navigating any crowds, and we rode slides until we were completely waterlogged and absolutely could not climb one more stair.
